This is a great way to use leftover mashed potatoes. Simply mix mashed potatoes with a tablespoon or two of plain flour (to help stiffen it), some cheese, crushed/minced or grated fresh garlic, salt and pepper. Form into patties and pan fry until crispy on the outside. Don’t worry — it may remain a little soft and mushy. It’ll still taste great. Top with fried or poached eggs and enjoy with some ketchup or HP sauce.

Left over mashed potato? I’ve never heard of such a thing in my house. Dov Cafe (when it was in Darlinghurst) used to make a great chicken salad with gherkins and fried mashed potato…this makes me want to recreate that dish!
